ma wheres the low carb meatloaf

Who doesn’t love a good meatloaf?  I don’t know why but I get these Sunday family dinner vibes from a good ol’ fashioned meatloaf… well a low carb version.  This is superrrr easy to make and so, so delish!  The majority of the carbs come from the almond flour and girl, that’s only 4 net carbs.  Please feel free to add any additional veggies, or increase/decrease the spices, I like to top mine with some Heinz no sugar added ketchup, it really is sooo good!   

All you will need is :

 2 tbsp oil

1 medium chopped onion

1 tbsp dried oregano

1 tbsp chili powder

2 lbs ground beef

1/2 lb ground sausage

1 c shredded cheddar

1/2 c almond flour

1/4c grated parmesan

2 eggs

1tbsp soy sauce

salt and pepper to taste

Preheat to 400 In a medium skillet, cook/sauté your onions in oil until they are clear-ish,(I added an additional teaspoon of chili powder here in the oil) Take off any jewelry, wash hands, and get those hands all meaty and messy mix the rest of the ingredients together with your hands until well incorporated.. Line a baking dish with foil and let that beauty bake for 40/45 min. Once done, let it set for 10 minutes before cutting it up.
