do you like pina colada’s?
I sure do! I used to only drink them when my husband and I would go on a cruise, ahhh man I miss cruising. They are so delicious, fruity, refreshing but also full of carbs and sugars and feel blehh after… Don’t fret sister, or brother.. I’m here! Around 2ish net carbs per drink! No blender, no prob these taste amazing over ice.. stir together and you’re good to go!
What you’ll need
1-17oz. bottle of sparkling ice coconut pineapple
6 oz. your favorite rum
4oz. heavy whipping cream
4oz. simple syrup
4oz. water
1 1/2 c of ice
Throw everything in your blender and let it work it’s magic! Optional garnish: reddi wip, coconut, and an umbrella.
simple syrup
1c water
1/2c splenda
1/4 tsp xanthan gum
whisk it all together in a medium saucepan, keep whisking to avoid clumpage.
let it boil for 45 seconds, remove from heat and let cool, it will thicken as you let it sit, store in fridge indefinitely.
